Kadhi is an Indian dish and it is very popular in all over the India . There are several kind of kadi and every state has it’s own indigenous flavored kadi , like Rajasthani kadhi, Gujrati kadhi, South indian kadhi , Sindhi kadhi etc . It consists of a thick gravy based on chickpea flour and contains vegetable fritters called pakoras in which sour yogurt or buttermilk is added to give it a little sour taste. My mother makes buttermilk at home and keep it for whole night for making it sour. It is often eaten with boiled rice or roti ( Chapati).
As here I am going to make drumstick kadhi but before that let me tell you something about drumstick. Earlier at my home we had a tree of drumstick, so most of the time my mother use to make dry veg of drumsticks flowers. Believe me it tastes amazing . Other than this, other use of drumstick is in Sambhar which is popular curry in south India and people use to eat that with rice. Drumstick also known as as shajan ki fali or munga ki fali in india (Hindi name). In one way I can say Drumsticks are very healthy and is kind of falls in vegetable catagory. Nutrition-wise it has proteins, minerals, fiber with nice taste. Regular consumption of drumsticks ( either in the form of juices or soups) reduces acne and other skin related problems. Women should eat drumsticks during pregnancy as it helps in healthy delivery along with ease in pre and post delivery complications. It also helps in boosting the milk production after delivery. The leaves and flowers of drumstick contain antibacterial agents and thus it is basically a natural remedy and thus also helps to fight against lung diseases such as asthma, bronchitis and tuberculosis. So indeed it is useful in many ways.
I am going to make my drumstick kadhi or karhi with lots of Indian spices today as my family loves spicy food. Let’s start our recipe now:
- 4 drumstick Peeled (cut into small pieces)
- 2 cup sour curd .
- 1/2 cup gram flour
- 1/2 tbsp chopped ginger
- 1/2 chopped garlic
- 2 tbsp mustered oil.
- 1 tsp red chilli
- 1/2 tsp cumin seeds
- 2 Bey leaves ( tejpatta )
- 1 black cardamon ( Badi ilaichi )
- 2 star anise(chakra phool)
- 2 cloves
- 1/2 tbsp chopped green chilli1/2 tbsp fenugreek seeds
- 1/2 tsp turmeric powder
Take water in big bowl and boiled it . Now add drumsticks , some salt and Cinnamon stick in boiling water and cook for 5-6 min at high flame ( as shown in picture). Boiling drumstick is my personal choice and thus If you want to avoid this boiling process you can . We can add these drumstick directly while kadhi gets cook. You can cook these drumsticks with tadka as well to give some nice flavor .
While our drumstiks are boiling, take another big bowl and add curd, gram flour, chilli powder, turmeric powder and salt
Now mix it well and make fine smooth paste as shown and make sure that there are not any lump .
Now take a Big sauce pan or kadai and put on gas at medium flame. When it become hot just add 2 tbsp oil. Right After 3-4 sec (when oil become hot) add cumin seeds, garlic, ginger, whole red chili , and all garam masala . Cook for not more than one min otherwise it may burn and it gives very bad flavor.
Now add curd mixture which was prepared earlier along with water. Remember that it should be very thin paste because it will take 30 min for boiling and thus after boiling it will be more thicker. So adding little extra water here in paste is good idea.
After 12 min of cooking just add previous boiled drum sticks with all water and mix it well. Now again cook for 15 min more. You will see that paste is becoming little dense with nice texture. Now kadhi is ready to serve but before that we can make takda while serving and believe me it boost the taste by double. But again it’s your choice and you can go for it.
For tadka; extra Ghee , asofatida (Hing) and red whole chillis will do and I love to serve hot kadhi with that.
Now the spicy drumstick kadhi is ready to eat. Serve with Rice, Kakka ki Roti or plain Roti(Chapati). I bet you will love it.
