The popular kashmiri dum aloo is a traditional north indian recipe wherein the aloo or potatoes are cooked with spices and onion-tomato paste under pressure or dum. Every culture has it’s own version of the dum aloo.. Devour the classic kashmiri dum aloo ,cooked in a rich spicy gravy with naan or paratha. The boiled aloo or potatoes are cooked in a delectable gravy comprising of khoya, crushed nuts , tomatoes and select spice powders and whole spices.A subtly spiced rich and mouthwatering party special vegetable recipe, the kashmiri dum aloo is best paired with naan or paratha.You could substitute the ghee for oil while deep-frying or even bake parboiled potatoes after stuffing. I am making Kashmiri dum aalu with spices and curd without onions . I love stuffed dum allu but next time i will post that recipy . I hope You will enjoy it !!
4-5 Baby potatoes (Half boiled)
1/2 cup curda
1 tbsp fennel powder
1 tbsp coriander powder
1/2 tbsp dry ginger powder
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp chopped garlic
1 tsp cumin seeds
2-3 bay leaves
1 tsp mix whole garam masala
salt to taste
Take heated pan and add some oil . Now put the (half boiled) potatoes , fry it for 5-6 min at medium flame.
Now take a bowl and mix dry ginger powder , coriander powder, fennel powder, and red chilli. Add 2 tbsp water. Mix it
Now take heated pan and put the 2 tbsp oil . now put the cumin seeds .
Now add whole garam masalas .
Now add chopped garlic. cook for 1-2 min .
Now add Mix masala . Cook for 2-3 min .
Now masala and oil are separated .
Now add curd . cook for 3-4 min . and add some water.
Add red chilli powder turmeric powder and salt.
Cook for 2-3 min.
Now add fried Potatoes. and water.
Cook for 8-10 min at medium flame.add some coriander leaves (chopped ).
Spicy Kashmiri Dum Aloo is ready to eat !!!!!!!!!!!!!!!!!!!!!!!!!!
